Chocolate Peanut Butter Sugar Cookies {Recipe}

Can’t you just feel spring all around you? OK, if you are like me, it’s still a bit cold most days. But, in the Midwest, we get those days where the sun surprises us with all its glory and warmth. On those mornings, I wake up and open my windows nice and wide. Then, I just stand there with my coffee and look out the window. “Mooooom!” Well, that moment is over because my kids are awake. Now comes that part of every stay at home mom’s day… “What am I going to do with the kids today?”

For me, I always try to include some type of play and some type of craft. Those two things allow my children to get out their giggles and get their hyperactive bodies ready for a nap or a “calm down” moment later in the day. But, my all-time favorite thing to do with my children are crafts. I am a creative person and I parent with my own strengths. Crafting does not always mean cutting paper into shapes; it can mean a simple recipe. If my kids are good, we make a fun snack at the end of the week. Our favorite snack is Chocolate Peanut Butter Sugar Cookies. Because I am a nice mommy, I will share it with you. Sharing is caring, right? 

P.S. Sugar cookies are easier to make and less stressful because you probably have most of the ingredients at home already.

Chocolate Peanut Butter Sugar Cookies

Ingredients :

2 ¾ cups All-purpose Flour

½ teaspoon baking powder

Pinch of salt

1 cup of butter softened

1 ¾ cup of sugar(use 1 ½ for dough, save remainder for icing) (use less if you don’t want them too sweet)

1 egg

1 teaspoon vanilla extract

½ cup of peanut butter

2 tablespoons of cocoa powder.

Note: If you don’t want the chocolate peanut butter on top omit the last two ingredients.

          **Also, if you use self-rising flour, you won’t need the baking powder and salt.**

Recipe:

  1.       Preheat your oven to 375 degrees
  2.       In one bowl stir your dry ingredients, flour, baking powder, and a pinch of salt. Set to the side
  3.       In another bowl cream butter, sugar. Then egg and vanilla.
  4.       After that, slowly add your dry ingredients.
  5.       Spoon dough onto a lined baking sheet (for easy clean up).
  6.       Bake cookies for 8-9 minutes for softer cookies and a minute or two longer for harder cookies.
  7.       Let, cool.
  8.       Mix peanut butter, sugar and cocoa powder, and melt. Spread mixture onto cooled cookies or drizzle with a spoon.
  9.       Eat!!
