Okay, are you ready for me to admit something – I don’t love pie. There I said it. I don’t love pie. Man does that feel good to get that off my chest. I hear you saying, “Well then why are you writing a pie recipe”. Let me explain – I don’t love pie crust is more like it. Why? I’m not sure, I have always hated (yes I know hate is a strong word, but it is well deserved here) pie crust. I love the pie filling and even more a crumbly topping! But to balance out my hatred of pie crust, in comes the husband. He loves pie crust, but usually isn’t in it for the pie. There are a few exceptions to that rule, which are as long as it isn’t a fruit pie. So to appease both of us, I came up with this apple crumble pie.
I love a good crumble, I think it is better known here in the US as a cobbler. Little known fact about me is that I am half British, so I was raised with a lot of British terms. Also raised with a love of British food – I think it is some of the best food in the world. Not that I’m a super world traveler or anything. Okay, enough about me, let’s get into baking this apple crumble pie.
Here’s what you’ll need:
Pie Crust (Here’s my Grandmother’s recipe for pie crust)
1 ⅓ cup brown sugar
½ cup heavy cream
½ teaspoon vanilla
½ cup butter
4-5 apples, peeled and chopped
½ cup plus ⅓ cup flour
2 teaspoons of cinnamon
1 cup oats
I’m going to break this recipe up into three stages before we bake the pie, but first preheat your oven to 350 degrees. One note before we start, this is a pretty dry pie so if you are looking for a little more oozy apple filling double up your caramel sauce.
Caramel
We are going to start off by making a quick and easy caramel. Take 1 cup of brown sugar, ½ cup of heavy cream, and ¼ cup of butter and put them all into a saucepan over medium heat. You don’t want to leave the caramel unattended because it can scorch quickly. You will want to bring it to a rolling bubble. It will start to raise up – just swirl the pan. Let the rolling bubble happen for 2-3 minutes and then turn off the heat and add the vanilla. Let the caramel start to cool as you make the rest of the pie.
Apple Filling
Toss together apples, ½ cup of flour, and 1 teaspoon of cinnamon until evenly coated. Then you will want to add 1 cup of your cooled caramel to the apples.
Crumble topping
Mix together 1 cup of oats, ⅓ cup of brown sugar, ⅓ cup of flour, 1 teaspoon of cinnamon, and ¼ cup butter. I find it easiest to use my hand to make the crumble topping.
Putting it all together…
Once you have your filling and crumble topping made, add your filling to your pie crust and then top with your crumble topping.
Bake for 35-45 minutes depending on your oven. You will want to see a golden brown crumble and that the apples have softened. If your crumble is browning too quickly cover loosely with foil.
Once your pie is baked, remove it from the oven and let it cool. I find that letting it cool down makes for easier cutting, but you can eat it hot if you please.
